A tip for the valve work: replace worn valve guides before lapping in the valves. A new valve in a sloppy guide never seals properly and lets oil past the stem. Drive the new guides in square, lap each valve with fine paste until you see an even, narrow seat, and clean everything thoroughly before the head goes back on. Re-torque the head gasket after the first hours of running if that is specified for this gasket.
