Temperature sensors normally sit in the coolant circuit. Swap them with the engine cold, keep a drip tray underneath and screw the new sensor in quickly so you lose very little coolant. Afterwards, top up and check that the tank cap still seals, because a tired cap lets the system lose pressure.
